Chicken Pickle/Kozhi achar

Chicken pickle.. i think most of u get confused about the title, right? Did she type it wrong.. no guys.Today i thought i can share with u guys something special. That is Chicken Pickle. Kerala is famous of these kind of non-vegetarian pickles.The Fish, Chicken and Beef pickles are the very popular non vegetarian pickles in Kerala. Amma hardly makes any non-veg pickles but my aunt  is an expert in making fish pickle.(Sure i will post the fish pickle ).
For long time i was thinking to prepare this chicken pickle. Whenever i talk about the chicken pickle  my hus used to say u can't make chicken pickle like fish (Tuna, King fish) because chicken texture is so different.really i was in dilemma.one day suddenly he asked what happened? Nowadays not hearing abt the chicken pickle? Anyway u just try it.. So I decided to prepare it in the same day and luckily some chicken was there in the freezer. Frankly speaking i did not know the recipe but i wanted to give it a try. I searched for its recipe but hardly find any.so what i did is i just called my aunt and collected the fish pickle recipe then made some changes and tried this  one and the result was superb. My hus really liked it and he concluded that the chicken pickle is as good as the fish one. (Only if I get a good review from my hus, i try those recipes again.

Really it is a delicious side for rice or roti. No need to make any other curries. Usually for this preparation we are using lots of oil. if u want to prepare the low-fat version, do not add more oil. if u want to keep the same for longer it is good to use more oil. But i don't think we are going to keep the chicken-pickle for that long. Here i prepared it with only one pound of boneless chicken and it is finished within days.
So let me tell u how i made the delicious pickle.
Ingredients
Chicken(boneless)(kozhi kashnangal): 1 lbs
For Marinating the chicken
Salt (uppu) : to taste
Turmeric Powder (manjal podi): 1 tbsp
Ground Pepper (kurumulaku podi):1tbsp
Garam Masala Powder: 1 tbsp
Redchili Powder:1tbsp
For frying
Sesame Oil (nallenna): 5 tbsp
Mustard seed(kaduku): 1 tsp
Red chili(chuvanna mulaku): 4 nos
Curry leaves(curryveppila): 2 sprig
Garlic(vellulli): 10 pods
Ginger(inji): 1 big size
Green Chili (pachamulaku): 3 nos
Asafoetida: 1/2 tsp
Red Chili powder: 3 tbsp
Whole pepper(kurumulaku): 5-8 nos
Whole Fenugreek(uluva): 3nos or Fenugreek powder: 1/4 tsp
Red chili powde(mulaku podi)r: 2 tbsp
Salt(uppu) : to taste
Vinegar(vinagiri): 3 tbsp
Preparation
  • Cut the chicken into very small pieces.and pat dry the chicken in the kitchen tissue paper
  • Marinate the chicken with salt, turmeric powder, pepper powder and garam masala. Keep it for an hour
  • Slit the green chili ,slice the ginger and garlic.
Procedure
  • Heat oil in a pan. Deep fry the chicken. Do it in batches.
  • Transfer  the deep-fried chicken in to a sheet tray and  let it cool for about 5-10 minutes
  • Heat 3-4 table spoon of oil  (you can use same oil which is used in the above step)  and add  mustard seeds
  • Once it started spluttering add the red chili, whole pepper and fenugreek seeds followed by green chili, ginger and garlic slices. Fry until the g-g-g get light brown color .
  • Add the Red chili powder and asafoetida .fry for a minute or two.(if u r using the ground fenugreek fry that too)
  • Add the curry leaves into the mix.. saute well.
  • Add the fried chicken pieces and the extra oil (if u like to add) and mix all together and heat for 3-5 minute in very low heat.
  • Once the mix get cool down add vinegar..Keep the same in an airtight container for 2-3 days in the room temperature.
The delicious pickle is ready to have..
Cook's Tip
  • Completely dry the chicken pieces using kitchen tissues
  • keep the marinated  chicken pieces for more than an hour.
  • use the sesame oil instead of any other oil.
  • Always use dry spoon to serve the pickle otherwise the the pickle get moisture and it leads to get the fungal and that spoils the whole pickle
  • You can keep the same for 3-4 months in the refrigerator.(Add more vinegar and oil, if you are planning to keep it for long time. Also make sure that all chicken pieces are immersed in the oil-vinegar mixture)

RARA Chicken

Today I going to share with you some non-vegetarian dish. This is something new (at least for me)..I don't know how many of you are heard of this delicious chicken dish- "RARA Chicken". When I get this recipe idea I was wondering about its name. I started searching about it and finally got that it is a punjabi cuisine(rara means dry in punjabi) and it is the dry form of chicken curry.. However when I prepared the dish, it didn't come out as dry as I thought. But it was tasty :). I can gurantee that this is a very tasty chicken dish but it's preparation is not that easy.. if u have time then only start preparing this.. best combo with chapathi and fried rice.
When I asked my hus about this name, he told me that he never heard about such a dish and advised me to be careful while trying these kind of unknown dishes. But after tasting my new dish he said: "Kollallo, oru variety chicken curry koode kittiyallo.. (Good..got one more variety  chicken recipe). I was too happy because it was worth my effort and got a new delicious dish.. (Thankful to chef Lakshmi).
About the recipe: As I mentioned earlier it is not an easy task but not that complex/difficult.. We have to combine so many things together to prepare this delicious curry. The easy part is Phase 1 - "cooking the onion and ggg". Do not add more than two cups of water for cooking the ingredients.. If u r feeling the water is less, just add some water during grinding. Be careful while frying the onion and ggg's in Phase 3. The onion get burn very easily.. Do not add the burnt onion to the curry, it spoils the entire curry. Fry the ggg and onion separately. Cut the onion into very small pieces for frying. Use enough oil for frying otherwise it will take long time to get the onion to fry.
In the last phase just use paste of 4 or 5 cashew nuts.  if u use more cashews add more red chilli as well: otherwise the chicken curry have sweet taste.
Ok let me share the details of this recipe.Try it, sure ur loved ones is going to love this dish .
Ingredients
For Phase1
Ginger:medium size
Garlic: 5 pods
Green chili: 3 nos
Onion: 1 medium
Tomato: 1 no
Turmeric: 1/2 tsp
Redchili Powder: 1 tsp
Coriander Powder: 1/2 tsp
sallt :to taste
water: 1-2 cup
For Phase2
Chicken:1 pound
For Phase3
Oil:1/4 cup
onion: 1 medium
Ginger: 1 medium size
Garlic:5 pods
Green chii: 2 no
For Phase4
Oil: 1 tbsp
Red chili powder/Kashmiri chii powder:11/2 tbsp
Ground cumin: 1/2 tsp
Kasoori methi :1 tbsp
Garam Masala: 11/2 tbsp
Tomato:1 no
Cashew nut:3-5 nos
water: for soaking the cashews
coriander leaves:some
Preparation
Phase1
Step1:
  • Crush the ginbegr garlic and green chili.
  • Cut the onion into small pieces
  • Cut the tomato into 8 pieces
Step2:
  • Cook the ginger garlic green chili onion tomato along with turemric powder chili powder coriander powder and salt.Add 1-2 cups of water.Cook it for 10-15 minutes in medium heat.Close the pan and cook it.
  • Let the cooked mix to cool down.Once it cooled make a nice paste of the cooked mix using a mixer
Phase2
Step3:
  • Cook the chicken with the grinded mix until the chicken is well cooked.Add water as much required
Phase 3: 
Step4: 
  • Cut the ggg and onion into very small pieces.
  • In another pan heat oil.fry the  GGG until nicely fried .
  • Fry the onions until crispy.Fry the ggg and onion seperatley.
Phase4: 
Step5:
  • In the same pan take the 1 tbsp oil(if excess oil is there transfer them into other container) add the kasmiri chili powder ,ground cumin,kasoori methi and garam masala..saute for 30 seconds
  • Add the sliced tomato into it saute for 1-2 minute.(Keep the heat level low)
  • Add the cooked chicken with gravy into the frying oil. Mix all together.
  • Add the Fried onion and gggs.
  • Change the heat level into medium.cook the chicken for 3-5 minute.
  • Make a nice paste of soaked cashews and add the cashew paste into the boiling chicken curry. Mix Well and just heat it for 30 seconds
  • Garnish with some coriander leaves.
The delicious Chicken rara is ready .Have it with fried rice.
Cook's Tip
  • Do not add more than 2 cup of water for boiling the mix in phase1.
  • ''ggg is ginger garlic and greenchili.
  • Adjust the spice level according to your taste.
  • Do not overcook the chicken in phase 2
  • Be careful while frying the onion.If u r burn the onion while frying, it spoils the entire taste
  • In the last step just mix all the ingredients and then just heat it. No need to boil the curry..
  • According to ur taste u can use more cashews. You can use some cream for making the paste of the cashews. It ill give a nice flavor.

Szechuan Chili Chicken and Chicken& Vegetable Soup

Today I am going to share with you guys something special, it is a Chinese dish. It is so special for me because it was prepared by my Husband and a  special treat on my birthday.It was on last Friday and my hus got a special chance to work from home on. In the evening I thought I can get ready for dinner but suddenly my hus told me: "I think we can go out tomorrow and today as a special I can cook for u..".I really wondered and simply said OK because i love his cooking and of sure i know it would be so delicious one. I don't know whether i mentioned about his cooking in any of my earlier posts. you know he is a very good cook. but after marriage I rarely get a chance to taste his cooking. The best dish cooked by him is the Gobi Manchurian (Cauliflower Stir-fry) . I love it  very much...it's taste like anything. Always his friends mention about that food.I learnt it form him only.

On this special occasion my hus  prepared for me the Chinese dish. He knows that i am a great fan of Chinese dish. Really guys, i always prefer to eat Chinese and Thai food from outside. I never get tired of eating Chinese/Thai food. I like it as much as our Indian food.may be thats the reason he  just chosen the Chinese dish for me on this special occation.What he prepared was Szechuan Chili chicken,Chicken and Mixed vegetable&Chicken soup,rice(me) and a drink.So it was a 3 course food.Nowadys i have a good collection of cook books from library.he got the recipe idea from one of the book.

Whenever he starts cooking he used to call me and ask me "where is that curry powder? this curry powder?"..even if it is in front of his eyes he couldn't see that, finally I  have to come and show the same. And also he always has a demand that I need to clean and marinate the chicken. He doesn't like to wash and clean it. He doesn't even like to see or touch the fresh chicken. Sometimes when I cut the whole chicken (or fish) he will be away from that area. He couldn't even hear the cutting sound or and does not like to see the cleaning process.So I just kept all the ingredients in the kitchen cabin , cleaned the chicken and marinated the pieces as per his instruction.


It took almost an hour to complete his cooking. Even though I was playing with our little one, I kept on asking whether he need any help and i just want to do something. At last he told me to prepare the rice..I was so happy to do the same.The funny thing happened is usually after lunch or dinner I used to say "Oh! tired... lots of work na?" This time also after dinner I simply said "Oh tired, So much work na?" He was laughing like anything. Suddenly I realized my blunder and I added: "yea! too much tired of eating..."

"The Szechuan Chili chicken and the  Mixed vegetable&Chicken soup" - it was one of the best treat I ever had on my b'day. I really enjoyed having it. He is very perfect in cooking. I have to learn so much from him..if i am doing something perfect in cooking that's because of his guidance and criticism. Never ever he said  a bad comment (negative comment) about the food which I prepared. Even though the food tastes bad, he usually say next time if u add this or that, it will be be perfect.  I think that those kind of comments are always inspirational. My father also do the same. He always say good comment about my food whether it is good or bad. But my brother would ask "Amma, why did u let her cook?". If I am doing anything good in cooking thats beacuse of these comments and support which I got from my loved ones.Lot of stories na..Now i am going to tell you how my hus prepared this delicious food.
1.Szechuan Chili-chicken

Ingredients
Chicken: 1/2 pound
Salt : to taste
Pepper Powder: 1tsp
Egg White: 1 no
Oil: 3 tbsp
Corn starch: 1 tbsp
Ginger : 1 medium size
Red Pepper: 1/2 portion 
Yellow Pepper: 1/2 portion (you can use green pepper as well)
(In USA, they call Capsicum as pepper. Based on its color, there are: Red Pepper, Green Pepper & Yellow Pepper)
Red chilli : 3 nos
Spring Onion: 1 no
Carrot: 1 small (optional)
Soy sauce: 1 1/2 tbsp
Rice Vinegar: 1 1/2 tbsp
Preparation
Step1:
  • Clean and Cut the chicken, Red, Yellow Pepper and carrot into bite sized pieces.
  • Make a mixture of salt 1 tsp oil,corn starch,pepper  Powder and egg white.Marinate the chicken with this mixture to make a thin coating and keep asaide for 30 - 1hour.
  • Chop the ginger and crush the red chili to make the flakes.chop the spring onion.
Step2:
  • Heat 1 tbsp of oil in a pan just cook the chicken for about 5-7 minute in medium heat.and keep it aside.
Step3:
  • Heat remaining oil in the pan and add the ginger chili peppers and Carrot and fry for 2 minutes.
  • Add the chicken pieces followed by  spring onion ,soy sauce and rice vinegar.Fry for another 2-3 minute.
The delicious Szechuan Chicken is ready to serve..Serve hot with rice and soup..
Cook's tip
  • Cut the chicken and peppers in similar shape.
  • Do not add more corn flour.
  • Do not over cook the chicken then chicken became chewy (rubbery).
  • If u like a hot version increase the number of red chili
2.Mixed vegetable&Chicken soup.
Ingredients
Chicken: 1/4 pound
Onion: 1 medium size
Carrot: 1 small
Celery: 1 stick
Whole pepper: 5 nos
Bay leaf: 1 leaf
Water: 4 cup
Salt: to taste
Pepper corn: 7-8
Spring Onion: 1 
Corn : 1/2 cup
Garnishing
Spring onion : small portion
Pepper powder
Preparation
Step1:
  • Cut the chicken into very small pieces
  • cut the onion into very small pieces
  • Grate the carrot using a grater
  • Chop the celery into small pieces(lengthwise )
  • Cut the green and white part of the spring onion into small pieces
Step2: 
  • In a heavy bottomed pan ,add the chicken,onion ,carrot ,celery,pepper corns, Bay leaf,spring onion..add the salt to taste. Add 4 cups of water. Bring to boil in medium heat for about 20-30 minutes
  • Once the chicken and veggies are almost cooked just mash them using a spatula.
Step4:
  • Add the corns into it..bring them to boil about 10-15 minutes..
  • Just garnish the soup with spring onion..
The delicious soup is ready to serve..Add the salt and pepper according to ur taste.
3. Rice
Ingredients
Basmati Rice : 1 cup
Water : 2 cup
Preparation
  • Wash the rice and soak it for 10-20 minute
  • Cook the rice with water in Pressure cooker until 1 whistle..
  • Transfer the rice into a service plate .serve with Szechuan chiken and soup
4.Lemon Soda
Ingredients
Sprite: 1 can
Lemon : 1 
Sugar: 1 tbsp
Prpearation
  • Extract the juice from lemon 
  • Add the sugar in to it and mix well.
  • Pour Sprite in to the mix and stir well
  • Transfer the whole content into the glass.
Enjoy the drink and the delicious meal..

Stir Fry Chicken Lettuce Wraps

The recipe I am going to share with you today is "Stir-fry Chicken Lettuce Wraps". I got this recipe from Martha Stewart's cook book. This is something new which I tried and came out really good. So thought of sharing the same with you guys...hope you like it too.
I got this cookbook from Library.Here in US, one thing I like is the Library..there will be at least one library in every neighborhood and has a good collection of books, magazines and DVDs. I am not that crazy about reading books but we used to take DVDs from there. You know once we got a malayalam dvd from there!!! (I think some mallus donated it). Last time when we visited the library, my husband asked me "why can't you take some cook books and try some new recipes?". There we saw a good collection of cookbooks and finally i selected 2-3 books. I also chose some baking books too. Actually I am not that good in baking so thought of learning some baking tips too (sure,you can expect some of my new baking experiences in future posts :) ).
We had another version of "Chicken-Lettuce wraps" from one of the famous Chinese restaurant chain in US: "PF Chang's Chinese Bistro". But the filling is not the same as the one which I prepared here. I prepared the Chinese stir-fry chicken as filling.You can buy the lettuce from any grocery shop. There are so many varieties of lettuce are available: Boston lettuce, Iceberg etc .here i got the iceberg lettuce.Lettuce is always a healthy vegetable. Don't get confused it with Cabbage (Yes, When we first tried this at "McDonald's" during our first visit to abroad, we thought it was Cabbage leaf.) 
What the cook says about this dish is that wrapping the stir-fried chicken in lettuce keeps this dish lower in calories & Carbohydrates than it would be if served with rice/roti.The best part i liked about this dish is here we used very less oil for cooking.
OK, here is the details of the recipe
Cooking time:20-25 minutes
Ingredients
Chicken: 1 pound
Pepper: 2 tbsp
OliveOil: 2tbsp
RedBell pepper:1/2 portion(here i used yellow and Red peper)
Onion: 1 big 
Redchilliflakes:1/2 tsp
soysauce: 3 tbsp
Ricevinegar: 3 tbsp
Cornflour: 11/2 tsp
water:1 tbsp
salt: to taste
garlic: 3 pods
Ginger: medium sized
Lettuce leaves:8 leaves( about 1 head)
Preparation:
Step1: prior to cooking
  • Cut the chicken (use chicken breast) into very thin pieces. Marinate the chicken with salt and pepper. Keep it for 15- 20 minutes.
  • Cut Bell pepper and onion into thin slices.
  • Mince the ginger and garlic.
  • Mix the corn flour with 1 tbsp of water(do not add more water)
Step2:Cooking Chicken
  • Heat 1 tbsp of oil and add half portion of the chicken pieces and fry until the chicken get fully cooked (until opaque throughout).Transfer to a plate. Add the remaining portion of the chicken and repeat the same process.
Step3:cooking vegetables
  • Add the remaining oil in the same pan fry the onion until get brown color add the bell pepper and fry it for sometime.
  • Reduce the heat and add the ginger garlic and redpepper flakes and stir well and cook for 1 minute
Step4:Adding sauces
  • Stir in the cornstarch, soy sauce and rice vinegar. 
Step5:
  • Add the chicken and mix with all ingrredients..just heat for 1 minute and switch off the heat
Step6:Making wraps
  • Separate the leaves from the lettuce head and take one/two spoonful of stir fried chicken into the lettuce leaves and wrap it
Have it as an appetizer.
Points to ponder
  • Do not add excess water into the cornflour.
  • You can make the Red chilli flakes at home.just crush the red chilli pepper using Mortar and pestle
  • Do not overcook the chicken.just cook it in oil for 4-5 minutes.

Chicken Stew & HAPPY EASTER



First of all, I wish you all a very Happy Easter..Hope u guys are having a good time. In this easter occation i am going to share with u a very delicious non-vegetarian dish, "Chicken Stew". I think this is one of the popular dish all over the world however, the recipe and cooking method are different in different palaces. What i am going to share is a Kerala-style Chicken stew.
One of the main ingredient used for all type of stew is Coconut milk. Nowadays it is quite easy to prepare any dish using coconut milk because ready-made coconut milk is availble in all the shops.I do remember when amma prepared this dish; she used to prepare the coconut milk at home (by squeezing the grated coconut using a white cotton cloth).  But still amma refused to use these ready-made coconut milk in her cooking. when amma came here in US, she didin't use those. She used to say that these ready made milk does not give the exact taste..Yes, that's true..Now a days powdered and/or liquid forms of coconut milk are available in the market.Preparing this milk at home is not that difficult but it takes little time. In this busy-life nobody wants to spend time to prepare the milk. 
Ok let me explain the preparation method.
Cooking time : 30-40 minutes
Ingredients
Chicken: 1 pound 
Onion : 1 no
Carrot : 1 no
Potato: 1 no
Ginger : small piece
Green chili: 6 nos
Garlic: 4 pods
Oil: 2 tbsp
Curry leaves: 1 spring
Turmeric Powder: 1  tsp
Coriander Powder: 1/2 tsp(optional)
Pepper Powder: 1 tbsp
Salt : to tatter
Fennel seed : 1 tsp
Cinnamon: half portion of a medium sized one
Cardamom: 2 nos
Cloves: 5 nos
Coconut Milk: 1 1/2 cup diluted(Second Milk - randam pal)
Coconut milk:1/2 cup concentrated(First Milk - onnam pal)
For Seasoning
Mustard Seed : 1 tsp
Red chili: 2 nos
Curry leaves: 1 spring
Preparation
Step 1:

  • Marinate the chicken with Salt ,Turmeric Powder and Pepper Powder
  • Dice the onion,carrot and Potato into medium size pieces
  • Make a nice paste of ginger and garlic
  • Slit the green chili into 2 pieces
  • Make a nice powder of fennel seed. 

Step2: Heat oil in a pan.add the Cinnamon stick and crushed cardamom and cloves, sauté for 1-2 minutes
Step2: Add the diced onions into it, saute until the onions become light brown color.
Step3: Add the green chili,garlic ginger paste ..saute well 
Step4: Add the carrot and potato let them fry for some time (until the edges become light brown).
Step5: Add turmeric powder and Coriander Powder and salt,Curry leaves.Mix all together
Step6: Add the chicken into it.
Step7: Add the diluted coconut milk and cook the chicken for 10-15 minute in medium heat
Step6: Once the cooked mix get thicken add the concendrated coconut milk and cook it for 2 minutes in low heat and switch off the heat
Step7: In another pan heat the oil ,Add the mustard seed ,once it started spluttering,add the red chili and curry leaves..saute for 10 second
Step8: Pour this seasoning into the Chicken stew


The Delicious Chicken stew is ready to serve..Have it with Appam,Idiyappam or Rice..
Cook's Tip
  • Do not over cook the vegettable..Once it is slightly cooked add the chicken
  • Marinate the chicken for 30 minutes to 1 hour
  • For making the the diluted coconut milk..Take a 1/2 cup of milk from the bottle and mix 1 cup of water.
  • Do not boil the mix after adding the onnam pal.
Preparing the Coconut milk at home
Ingredients
Grated coconut: 1 cup
Water : 1 cup
Step1: Grate the coconut using a coconut grater( use the store bought  frozen grated coconut also)
Step2: Add one or two tbsp of water into the garted coconut and grind them to make a nice paste
Step3: Extract the coconut milk from the paste using a cloth or the tea stariner 
Step4: Collect the milk into a bowl..This is the concentrated milk or "First Milk - Onnam Pal"; Keep it for further cooking
Step4: Grind the remaining coconut mix again and add 1 cup of water
Step5: Extract milk from it. This is diluted milk or "Second Milk - Randam Pal"..

Kozhi Nirachathu/Stuffed Chicken



Today I am going to share with you a very special dish, called "Kozhi Nirachathu"(Stuffed chicken)...It is a special Malabar dish (north Kerala) and mainly served on special occations. Frankly speaking, I didn't have any idea about this dish and we never had  a chance to taste it before...One day whne I was browsing through some blogs I got this recipe idea from Malabar spices. I am so happy to see this kerala style recipe because here in US, for Thanksgiving dinner, I can try this recipe instead of the turkey.. If you have it with paratha or chapathi it is perfect combo.otherwise you can have the chicken as the main course just with some salad and bread stick.
If you like, you can make vegettable stuffing instead of egg...Next time I have to try with some potato..But this time I just followed the traditional way. Still I added some more vegetables for baking...Just try this one, sure you will try it again and again.. It is simple but it takes almost 3 hours to complete the whole cooking...But the dish is worth to our time .If u prepare this dish for guests sure they will ask for the recipe(if i like any dish i hardly forget to collect the recipe from them)
When my husband comes from office, he directly goes to the kitchen and checks the dishes one by one which I prepare for dinner..and he usually tastes each dishes and gives his comments.Today i prepared this one, he really loved this dish - "Kozhi Nirachathu"...While seeing the dish he told me "Ok, let's have dinner now itself" (it was only 6:30PM :))..Such kind of comments make me so happy..I always like to surprise him by making different dishes ..
Here in US, we can find the Rotisseri chicken (Grilled chicken) in almost all food store..Sometimes we used to buy that for our dinner..But that doen't have this kind of much massla (I mean kerala spicy) and stuffing..But today's chicken is really stuffed with our massla items...Because of the baking and frying the whole chicken gets that full flavor..So it is delicious..
Let's talk about the preparation..

Cooking time: 45 minutes
Preparation time: 2 hours
Cost of the item: 3.99 usd/Whole chicken

Ingredients
Chicken - 1 whole chicken

For marinating the chicken
Turmeric Powder: 1 tsp
Chili powder:2 tbsp
Salt: to taste
Oil: 1 tsp

For the stuffing
Boiled egg: 2 nos
Onion: 1 medium
Tomato: 1 medium
Garlic: 3 pods
Ginger: 1 mediumsize
Green chili: 2 nos
Turemeric Powder: 1/2 tsp
Chili Powder: 1 tsp
Coriander Powder: 1 tsp
Garam masala: 1tsp
Coriander Leaves: little
Curry leaves: 1 spring
Cashewnut: 5 nos(optional)
Raisins : 5 nos(optional)
Kitchen thread : 2 thread

For frying chicken
Oil: 1/4 cup

For the gravy
Fennel seed : 1 tsp
Onion: 1 medium
Tomato: 1 medium
Garlic: 3 pods
Ginger: 1 mediumsize
Green chili: 2 nos
TuremericPowder: 1/2 tsp
Chili powder: 1 tsp
Garam masala: 1tsp

For baking: 
Capsicum: 1/2 portion
Mushroom: 5 nos

Preparation
Step1: Clean the whole chicken. Apply some lemon juice while cleaning the chicken
Step2: Make a paste of turmeric powder, chili powder, salt and 1 tsp of oil...marinate the chicken with this paste and keep the marinated chicken in the refrigerator for 1 hour





Step3: Boil the eggs until it is fully cooked. While boiling the egg add 1 tsp of salt..It will help to prevent sticking shells on the boiled egg. Once the eggs are fully cooked transfer them into the cold water then peel off the shell and keep it aside
Step4: Prepare the Stuffing
1.Heat oil in a pan.Add the sliced onions (keep half of the onion slices for gravy) .
2.Once the onions get brown color add the ginger-garlic paste and the green chili.Saute well
3.Add tomato.Once the tomato get fried add the garam masala, turmeric powder and chili powder .Mix all together 
4.Add the coriander leaves and curry leaves.
5.Add the boiled egg into the mix and cook for 2 minutes in medium heat...
6.Switch off the heat and transfer the content into a bowl and keep it for stuffing.


Step5: Stuff the chicken with the above "egg-masala"
Stuff the egg masala inside the chiken..Put the egg first then the onion masala.Do not try to over stuff. Tie together the chiken legs first then chicken wings using the kitchen threads.

Step6:Fry the stuffed chicken
Heat oil in the pan..Fry the chicken until all the four sides get light brown (not necessary to fully fry the chicken)


Step7:Preheat the oven in 400F. Place the chicken in to the oven safe bowl..Place the breast side down .Add the veggies arround the chicken.Spray some  oil(used for frying the chicken). Bake it covered for 30 minutes ..Cover the bowl with an aluminium foil.





Step8:Preparing the gravy
1.Heat oil in the pan (use the same pan and oil used for frying the  chicken)...Add the onion once the oil get heated. Saute the onion for 2-3 minutes
2.Add the ginger garlic paste and green chili.saute for some time
3.Add the tomato.
4.Make a nice powder of fennel seed.Add this into the onion mix..Add the turmeric powder chili powder garam masala ..Saute for 5 minutes .

Step9
Pour this gravy into the half baked chicken and bake it for another 20-30 minutes in 400F uncovered.

The delicious Kozhi nirachathu is ready to have...


Cook's Tip
  • You can add any vegettable.Here i used capsicum and mushroom..
  • You can use cashewnuts and raisins and cuscus also for stuffing...
  • If you want to make it spicy add more chili powder.
  • If you do not like to add the gravy just leave the final step.
  • If you do not like to use the oven, deep fry it in the oil for 30 minute in medium heat...
  • If u like u can buy the Cornish game hen,Its available in all grocery store..

Coriander Chicken roast/Malli Kozhi Piralal


Today i am going to share with you a different non-vegetarian recipe -"Coriander Chicken Roast"...This is not a usual kerala style chicken roast.It is something different.The main ingredient for this is coriander seeds..Actually i got this recipe idea from Chef Lakshmi and she prepared this with mutton. I have already posted that Mutton dish here. While having this mutton dish my husband suggested me that why can't you  try this recipe with chicken..ya it was a good idea..finally i tried it with chicken ,as a result i got one more entry for the chicken recipe collections...About this recipe, it is very simple and quiet easy to prepare..Usually any non-veg cooking we have to  saute the ingredients for atleast 10 minutes in oil or butter but in this recipe it is not necessary to  saute anything. just add all the ingredients as fresh as its available..We named this dish as Coriander Chicken Roast...Hope all of you will try this recipe..I can guarantee that u will like the taste...

Cooking time : 15-20 minute
Cost of the item: 4.29 usd/whole chicken

Ingredients

Chicken: 1 pound
Corriander seeds: 3 tbs
black pepper seed: 1/2 tbs
Cumin seed:1/2 tsp
Turmeric Powder:1/2 tsp
Kashmiri chili powder: 1 tsp
Pearl onion : 15 nos
Ginger : meduim sized
Garlic : 6 pods
Green Chili: 4 nos
Fenugreek: 1/2 tsp
Water: 1/2 cup
For seasoning
Oil: 1 tsp
Pearl onion: 4 nos
Curry leaves: 1 spring
Coriander leaves : some

Preparation
Step1 : Grind coriander seeds,black pepper and cumin seed with turmeric powder and make a
nice powder
Step2: In a pressure cooker,add the chicken pieces with sliced pearl onions, splitted green chili , sliced garlic, ginger and fenugreek seeds .Mix all together and then add the above masala powder mix along with water...
Step 3: Cook it until all the chicken pieces are well cooked or 2-3 whistle
Step4: Heat oil in a pan..Add the sliced pearl onions ,saute well then add the curry leaves..
Step5: pour this into the cooked chicken roast..Garnish with some cilantro
The Delicious Coriander Chicken Roast is ready to have..Good Combo with rice.


Cook's tip:
  • Do not add more than a cup of water...If you like to have more gravy u can add 1/2 cup to 1 cup of water..Chicken itself has lot of  moisture
  • Do not overcook the chicken...
  • If u do not have pearl onion just use red onion and dice them into very small pieces..

Chili chicken(Indo-Chinese)

Chili chicken is basically a Chinese dish. But we made it as our version of Chinese chili chicken and became very popular dish in all over India...In most of the restaurant menu the chili chicken is considering as a special dish Vegetarians have their own version of this dish with cauliflower(Gobi). Last week we went to one of the good Indian restaurant in our neighborhood. They are serving this "gobi Manchurian" as the "HOLY" special.. 

When I heard about chili during our first visit to US, I thought it was one of our chili dishes (chili chicken, chili beef etc). Then i came to realize that it is a dish with ground beef, chili peppers ,tomatoes and kidney beans. So do not confuse with that chili and this chili dish. There are varieties of chili chicken recipes  available. It is available in dried version and in gravy version ( My LH like the roasted version).. When I was searching for this indo-Chinese recipe i got a wonderful recipe from the "Vahrehvah" chef..I tried the same...first 2-3 times it didn't come out as I expected (my LH also felt the same!)..After few tries i got the trick and also  i got some good feed back from some of  our friends those who got a chance to taste this dish... 
Nowadays i am looking for dishes which takes only less time for cooking because my little one is making me busy almost all the time. He always needs mama to play with him.so my visit to kitchen during the daytime is limited only to grab his food.
Cooking this dish is not that difficult but be careful while  frying the chicken. The success of the dish lies with how well we fried the chicken.Hope you will try this recipe ....

Cooking time : 30 minute

Ingredients






Chicken :15 small pieces 
Red chili: 6 nos 
Bell pepper (capsicum): 1/2 portion 
White onion : 1 big 
Ginger : 2-3 chunks
Garlic: 6 pods
Cashew nut : 6 no
spring onion: 2
Soy sauce: 3 tsp 
Seasme oil/any oil: 4 tsp 
Chili Garlic sauce: 2 tsp 
Food color : a pinch(optional) 
Corn flour : 1 tsp 
Sugar : 1/4 tsp 
  
Marinade of the chicken
Cornflour : 2 tbs
Egg : 1 no 
Pepper powder : 2 tsp 
Salt : to taste 
Oil for frying 

Preparation 

Prior to cooking:
1.Clean and cut the chicken into medium bite size pieces.(use boneless or with bone).

2. Make a mix of the salt, egg, pepper powder and the cornflour.Add the chicken into the mix.Keep it aside for 10 minute.
3.Cut the onion and bell capsicum into small square pieces..Seperate each pieces

4.Cut the garlic and ginger lengthwize into small pieces.

5.split the redchili into 2 pieces

6. Add tsp of corn flour in 1/4 cup luke warm water and prepare a syrup

How to Prepare

Step 1. Heat oil in a pan. Deep fry the chicken pieces.So try to avoid crowding the pan by adding all the chicken pieces together. so do the frying in 2-3 batches.

Step2: Heat oil in a pan,Add red chili, ginger garlic cashews one by one and let them saute for seconds. 

Step 3: add the onion,capsicum into it let the onion to fry for 3 minutes..not necessary to deep fry the onion..
Step 4:Add the fried chicken pieces into it ..stir well.

step 5: Add the chili powder , pepper powder and chilli garlic paste and soysauce one by one..Mix well

step 6: just add 1/4 tsp of sugar  and salt to taste(usually using the brown sugar)

step 7: Add 1/2 cup of water and food color to the mix.And also add 2 tsp of corn flour syrup.

Step 8: cook until the gravy get thickens,otherwise dry it according to your taste

Step 9: garnish with corinader leaves and spring onion( i haven't use that in this recipe)

The delicious chili chicken is ready to have..Have it with Egg Fried Rice

Cook'sTip

  • Do not add more cornflour into the chicken while marinating.
  • Do not add more capsicum too.Use different colors (green orange  red) it will make your dish look so nice
  • Do not add more than a half cup of water if you like to make a chili chicken dried version.
  • The best part of chicken for this dish is the thigh meat..you can use the whole chicken too..(here i used the whole chicken)
  • Use sesame oil for preparing the dish..It will give more taste.
