CabbagePayarThoran/Cabbage Mungbean stir fry with coconut

Hello dear friends, hope all are doing good and enjoying the world cup.
Today I thought i can share with you guys some vegetable recipe: A Thoran (poriyal) - stir fried vegetable with grated coconut. The vegetable I used here is "Cabbage". We always like to have the cabbage in combination with some vegetables. I used to prepare the cabbage and carrot thoran. But here I added "Mung bean" (payar) for this special tasty thoran....Amma used to prepare this thoran for us. My hus also likes this combination ..so this thoran is one of the common one in our menu. The best combination is : This thoran with  rice and rasam. Sure it would be an awesome meal for u and ur family. Also you can have this with Chapathi (roti) or you can make  a sandwich with this thoran (if you are a sandwich lover).
This is a very healthy dish and easy to prepare one too. For the best result u just soak the moong bean overnight and also make sure that the moong bean is not overcooked while cooking it in the pressure cooker. Just add very little amount of water. One more thing I want to mention here is that when I prepared this thoran I used to add a little amount of fennel seed. My hus really like the flavor of fennel seed. Sometimes I simply add this fennel seed with the crushed coconut mix other wise i crush the fennel along with the coconut mix. If u do not like the strong flavor of fennel, just add the whole fennel with the cocomut mix. Do not use fennel seed for all the vegettable thoran..i used this for cabbage, carrot, beetroot and bean varieties. Actually these veggies and bean with fennel gives nice aroma to the whole dish.Once the thoran is prepared just season it with mustard, dry-red chili and curry leaves.
Let me share the details of the recipe.
Ingredients
Whole moongbean: 1/2 cup
Cabbage: 1/4 portion of the medium sized  one
Turmeric Powder: 1/2 tsp
Water: 1/2 cup
For grinding
Coconut: 1/2 cup
Green chili/Red chili: 2 nos(here i used red chili)
Fennel seed: 8 nos
Cumin seed: 1/2 tsp
Garlic: 1 pod
For seasoning
Oil: 1/2 tsp
Mustard Seed: 1 tsp
Red chili: 1 no
Curry leaves: 1 spring
Preparation
Step1:
  • Soak the Mung bean overnight.
  • Grate the cabbage using a vegetable grater. It should grate the cabbage in thin slices.
  • Crush the fennel.cumin, red chili and garlic. If u are using the shredded coconut mix the crushed ingredients with the coconut..keep the mix aside.
Step2:
  • In a pan, cook the grated cabbage along with turmeric powder and salt, just add a very little amount of water.Cook for 3-5 minutes in medium heat.(close the pan and cook)
  • Cook the moong bean and 1/2 cup of water in a pressure cooker until 1 whistle.Add some salt too.
Step3:
  • Add the cooked moong bean to the cabbage and mix together and cook it for 2 minutes.
  • Add the coconut mixture to the moong bean cabbage mix. Stir well. Let it cook for 1-2 minutes in medium heat.
Step4:
  • Heat oil in a pan.Add the mustard seed.once the seeds started spluttering add the red chili and curry leaves
  • Pour the seasoning into the cabbage payar thoran..mix well
The delicious Thoran is ready to have..enjoy it with Rice and rasam

Cook's Tip
  • Do not add more water for cooking the moongbean.

Vendakka Thoran/poriyal/Okra Stir fry

Today i am going to share with you a very simple vegetarian recipe called Vendakka Thoran/Okra stir fry. I think, Okra (ladies finger) is one of everyones favorite vegetables. I like this vegetable so much but my husband is not a great fan of it. He doen't like its texture. So i am very careful while cooking this vegetable. For avoiding the  mushy (gummy) texture, I always make sure that the okra is completely dry ( free of water) and then shallow fry it before cooking. And also do not add excess water while cooking it. Actually it has its own moisture ..so no need to add more water.
Vendakka mezhukkupiratti and theeyal are very poapular dishes in kerala however the Vendakka thoran is not that popular .Yesterday I thought of preparing the vendakka mezhukkupiratti but ended up with preparing the thoran. It came out really good. When i first tried this,it was completely a disaster.Thoran came out as a kulambu(curried form).
usually i prepared it with the original thoran recipe but this time i made some changes.when i prepared the okra avial i just grinded the green chili with the coconut mix..that  gives a very good taste.so for this thoran i crushed the green chili along with the coconut.it gives a very good flavor.
There is a malayalam movie  called Achuvinte Amma..One of the best comedy scene in the movie is that the amma is telling her daughter about how to prpeare the vendakka curry..it is a very funny scene.she is trying to say the entire preparation in English(but she doesn't know english)...I think most of my mallu friends have seen that film and enjoyed it. while preparing this i was telling that dialogues to my husband..He commented that "u are super than urvasi..bhagyayi sathyan anthikad kanathirunnathu"(If the director get a chance to see my acting he could have chosen me for that role;lucky mallus:))Both actresses: Urvasi and Meera jasmine are awesome performers..
lots of stories right...anyway it is the time to  explain the preparation steps

  • Add turmeric powder and salt  into the okra pieces  and mix well
  • Dice the onion into small pieces.
  • Make a coarse paste of green chili, cumin seed, coconut turmeric powder, garlic and salt.use a mortar and pestle for making the paste.

Step1: Heat oil in a pan(just add 1 tbsp of oil).Add the okra pieces into the oil..cook it for sometime..do not stir..
Step2: once the okra get sauted and the oily texture goes off add the onions into it..stir occasionally( be careful do not break the okra pieces)

Vazhakoombu Thoran/Banana flower Thoran

Today i am going to share you  one of the traditional kerala dish that is none other than one of our favorite dish vazha koombu thoran. vazhakoombu (banana flower)has different names as vazha choondu, vazhaipoo, ariti poo(Telugu), mocha(Bengali),balle hoovu (Kannada), kele ka phool(Hindi). It is a very healthy dish to eat. Here in usa it is not available at all time..but sometime we can find this in indian grocery shops or  chineese groceriy shops. In kerala, i think everyone has at least one or two banana plants at their backyard ..Usually all the part of this plant is useful for one or the other purposes..the leaves, stem, the flower and banana (ripened and raw ). I  always love to watch the time the banana flower is coming out from the banana plant. Everyday the bracts are coming out and we can see the flowers and within days the flowers become bananas..What a wonderful process and seeing the different stages of growing this is really a wonderful experience..Whenever I get chance, I love to have the sweet  honey coming from the flower threads, that's one of the joyful experience I ever had......Another thing is the vazhakoombu thoran that mom used to prepare at home...some of these tastes always brings us back to home...nostalgic ...

Last time when i saw the banana flower in the indian grocery shop,i thought of buying it and i thought i can share the recipe with all of you..most of the people may think it is a very tough job to do cleaning and chppong  the flower..but frankly speaking,it is not that difficult . it is so simple as we do with other vegetables. Just wash the  whole banana flower in running water and  peel off the 2-3 outer sepals. The color of the bract will change from dark maroon to a light maroon color after removing the 2-3 bracts..and the flower will be more tendered inside..That is good for cooking..that won't give the bitter taste to the dish. I used those sepals for serving the thoran..(just for the presentation). Finely chop the flower into small pieces (if you have a large stainless steel vegetable grater, you can use that)...Wash these in water (with a pinch of salt )and strain out..Add some turmeric powder and salt and keep it aside for 5-10 minutes...and also ..Hope all of you will try this traditional kerala vazhakoombu thoran...
